Marysabel & Moises
Marysabel and Moises are winners of the Cup of Excellence and are among the best producers in the world. On their farms they produce outstanding coffees, cultivate almost forgotten varieties and experiment with different growing conditions. They optimize their processes year after year. They recently installed an eco-depulper in their washing station to save as much water as possible. Today they only use 1/3 of the water for 6 kilos...
Semi - anaerobically washed
Semi-anaerobic washed coffee processing is a method in which the coffee beans are harvested in a low-oxygen (anaerobic) environment during the processing process. After harvesting, the beans are exposed to a low-oxygen gas mixture (CO2 and nitrogen) in a water tank. This method helps to protect the coffee from oxidation and to preserve the original variety of aromas and flavors that are often lost through conventional coffee processing.
