Semi-anaerobic washed coffee processing is a method in which the coffee beans are harvested in a low-oxygen (anaerobic) environment during the processing process. After harvesting, the beans are exposed to a low-oxygen gas mixture (CO2 and nitrogen) in a water tank. This method helps to protect the coffee from oxidation and to preserve the original variety of aromas and flavors that are often lost through conventional coffee processing.
