Our fine flavor cocoa is grown by 15 different small farmers in Acacias, central Colombia. Only the ripest fruits are harvested for this. After the cocoa pods have been opened, the best seeds are harvested and then fermented in wooden barrels. They remain untouched in the bins for 48 hours without being moved. Only after the 48 hours are the cocoa seeds moved every 12 hours until the fermentation is complete. The whole process of fermenting the cocoa beans takes about 5-7 days. As a superfood, our cacao nibs are the perfect nutritional supplement, e.g. in muesli, when baking or as a topping for various dishes.

Gloria Trujillo represents the various small farmers. She takes care of collecting the cocoa from more than 15 farmers and processing it on a farm to achieve a greater consistency. We have known Gloria Trujillo for two years now and we are working to constantly improve the quality of the cocoa using some of the fermentation and quality selection processes used in the coffee.
